Ingredients: 1/2 lb. breakfast sausage 4 large eggs, beaten 1/2 cup chopped fresh mushrooms 2-1/4 cups water 1 package Tony Chachere's Dirty Rice Mix Steps: In a large skillet brown breakfast sausage, drain fat. Add eggs and cook until firm. Add remaining ingredients. Stir well. Bring to a boil. Reduce heat. Cover. Simmer for 25 minutes, stirring occasionally. Yields 6 servings. RECIPE IDEA: Stuff finished dish into warm tortilla shells and top with grated cheese and salsa for a delicious breakfast burrito!
